The Oyster Appellations of Texas???

The great Texas-based food writer and oyster junkie Robb Walsh has a great new piece on his blog about the first tasting of Texas oysters from individual bays in a very, very long time. This is a most heartening trend, and I can’t wait to get down there myself to taste the differences between a Pepper Grove, a Possum Pass, a Lady’s Pass, a Hanna’s Reef, an Elmgrove, and especially a Todd’s Dump.
