Pied de Cheval

Some of you have heard about Pied de Cheval, the massive old Flat oysters that are a highly sought (and rarely seen) holy grail of oyster quests in France. Flats are scary anyway, and Pieds de Cheval (which ain’t called horse’s hooves for nothing) are the scariest. Here’s a nice shot of a couple of them from ostreaphile (or ostreOphile, as Nigel Moore quite rightly corrects us) Todd Patterson. First swallow’s the hardest.
