Some good news to kick-start 2009. Mystic oysters, raised with great care and awareness by Steve Plant just off the Connecticut coast in Fishers Island Sound, are now available direct. I sampled three dozen this week, and every single one was astonishingly firm, deep-cupped, and full-bodied. It’s rare that you don’t find at least one dud in a bunch of oysters, so Steve must be doing something right. The shells are also gorgeous—creamy green and white, with swirling ridges that evoke waves lapping on the shore. You can still get them in time for New Year’s, if you order…right…now!
